Holiday Nut Butter Cookies


I love baking for the holidays and this is one of my favorite cookie recipes! This is one my kids and I like to make together. It is healthy and delicious, and makes a great gift! I love to wrap these up and share with my gym and yoga friends – anyone who loves exercise appreciates a healthy cookie, especially this time of year!

Serves: 48 cookies, 1 cookie per serving


  • 1 cup almond or cashew butter
  • 1 cup Sucanat or organic coconut sugar
  • 1/4 cup Cottage cheese
  • 1/4 olive oil
  • 1/2 cup almond milk
  • 1/2 tsp. vanilla extract
  • 2 cups whole grain flour
  • 1/4 cup ground flaxseed
  • 2 tsp. non-aluminum baking powder
  • 1/4 tsp. Celtic salt


1. Preheat the oven to 350° F

2. Beat together the nut butter, sweetener, and cottage cheese with an electric mixer

3. Beat in the rest of the ingredients until well blended

4. Roll into 48 balls and flatten with a fork dipped in water, making cross marks

5. Bake on cookie sheets for 10 to 12 minutes until browned

    Can’t wait to try these. I have a great recipe for Cranberry Bliss Bars (Strabucks) made with Spelt flour and I will send to you to post. Absolutely delicious!
