Oatmeal Nut Butter Cookies


We all like a little sweet now and again. And for me I like it more “now” than “again!” Thanks to Haylie Pomroy‘s delicious cookie recipes my family and I can enjoy these cookies and not feel guilty! And they taste amazing with a nice cold glass of almond milk. Is it time for dessert yet?!


* 1/3 Cup Raw Nut Butter (Almond butter, cashew butter, whatever!)

* 1/3 Cup Almond plain unsweetened or chocolate unsweetened

* 2 Tbs olive oil

* 1 tsp vanilla extract

* 1 Cup Sucanat or organic coconut sugar

* 1 Cup whole grain flour

* 1/4 tsp Celtic salt

* 1/2 tsp baking soda

* ½ cup ground flax seed

* 1 Cup Oatmeal

* 1/2 cup Organic carob chips or unsweetened chocolate chips

(these are optional)

* 1/2 Cup chopped raw walnuts (or other nuts)


1. Mix together first 5 ingredients

2. Add remaining ingredients and mix

3. Drop by teaspoons onto baking sheet

4. Bake at 425° for 8 minutes or until done
